Breakfast Oats Soaked in Kefir

There are many different ways for using oats in our daily lives. But one of the favorites, of course, is to utilize oats for our breakfast needs. I usually just add milk, cook oats in low heat, add butter and a little brown sugar. That’s the way my kids always enjoyed their “kasha” (porridge). While I knew I could add berries and a lot of other ingredients, what I didn’t know  that I could also enjoy oats cold and soaked in plain Yogurt or in Kefir. During our  trip to Jordan,  I learned this nifty recipe from Nasim’s sister. This recipe includes array of ingredients like nuts, raisins, shredded coconut threads and honey to make this dish one fulfilling breakfast. If it passed my husband’s test, I can say that any oat lover will enjoy it. Not to mention that if you have all the necessary ingredients, you can toss this recipe together in less than 5 minutes.

My children love cheese quesadillas! They also crave for them at the most interesting times of the day! Going to a restaurant to get quesadilla for my children every time they want it is not feasible for me. Plus I love making stuff at home and figuring out making these was an easy matter. That’s how these guys were born to make everyone in my family happy! These turn out crispy on the outside, and satisfyingly cheesy on the inside.

A while ago I was a part of a month-long challenge group where I had very limited ingredients and a little time to make delicious meals. The idea was to keep the food simple, but nutritious. It was a great opportunity for me to reinvent my food palette and try out new ingredients in my kitchen. The challenge also allowed me to look at food as a fuel and also taught me to work with limited options. I still love cooking and baking, which sometimes take hours in the kitchen! But I am glad to know that I can whip something up in a jiffy when I am really tight on time.

There are many famous dishes in the world, claimed by several nations to be historically theirs. Some nations go further by telling that this or that dish symbolizes their national identity. Down the road we will be dealing with many such recipes. In this blog I am not intended to fuel this sort of disputes, rather I view all recipes as world heritage and of course I will try to trace the historical origin to give rightful credit to claiming sides. Today I present to your judgment one version of borscht, cabbage soup, which is claimed by Russians and Ukrainians. Both of them are Slavic nations and that is the uniting part. Red Borscht became very popular in former soviet states. There are little deviations in Red Borscht recipe and the funny part is that most of them are claimed to be either original or classic. Personally I do not believe in originality, you modify or improvise as you wish as long as you keep the essential ingredients and cooking pattern or you risk to invent completely different dish. We are going to publish different versions of borscht, you choose which one is closer to your taste. I started with the one we like the most.

The crispy waffle recipe I am going to publish today is my long searched one. Crispy outside and soft inside, this waffle conquered our hearts. Besides, it is easy to make. Waffle recipes like many other recipes have hundreds of variations. With little ingredient change, a new waffle recipe is invented. And we tend to hear following phrase frequently “Wow, I found best waffle recipe, I will text you the source”. I obtained this recipe in a similar way. Although I like this recipe so much, I believe, this is not the last one I am going to share with you all.

I believe this generally happens due to lack of cauliflower appreciation or we list cauliflower in the category of acquired tastes. If so let’s try really hard to acquire that taste. It might be a little challenging at first.
