Spinach Saag is a curried spinach which is very delicious and pleasantly creamy. It is an excellent side dish for almost anything. I mainly make it as a side to my Curry Chicken. It is very easy to make and if you decide to prepare Saag, it will be worth your time (that is if you like curry and spinach!).
Ingredients:
- 20 oz spinach
- 1 medium onion
- 2 cloves of garlic
- 2 inch piece of ginger
- 1 tsp of ground coriander
- 0,5 tsp of ground cumin
- 1 tsp of curry powder (you can also use garam masala. In that case also add 0,5 tsp of turmeric)
- 2 tsp of tomato paste or tomato puree
- 0,5 cup of heavy whipping cream (or better yet half and half)
- 3 tbsp of oil to cook
- salt to taste (optional)
Directions:
Cut spinach in smaller pieces. In one chopper load chop onions, garlic and ginger in somewhat fine puree.
Heat oil in the pan on medium-high heat. Add ground cumin. Slightly fry it up and add curry powder.
Add onion mixture and stir fry until transparent. Add spinach and mix it well with the rest of the ingredients. Add tomato paste, coriander and a little salt if you wish. Mix everything well and close the lid of the pan. Put it on medium-low and let the spinach cook for about 10 minutes. Add a little water if you think it is necessary to keep spinach from sticking to the bottom of the pan.
Once spinach is cooked, add the cream, mix everything well and let the spinach rest for another 5-10 minutes. When you see everything incorporated into a creamy mixture, your Saag is ready. As simple as that :)
