A while ago I was a part of a month-long challenge group where I had very limited ingredients and a little time to make delicious meals. The idea was to keep the food simple, but nutritious. It was a great opportunity for me to reinvent my food palette and try out new ingredients in my kitchen. The challenge also allowed me to look at food as a fuel and also taught me to work with limited options. I still love cooking and baking, which sometimes take hours in the kitchen! But I am glad to know that I can whip something up in a jiffy when I am really tight on time.

Grilled Trout Recipe
It all started getting out of hand at Steamboat Springs, where we went for a family vacation. Wanting to catch fish turned my husband to an avid fisher… Except there was no fish in our bucket! Nasim couldn’t catch anything for almost 2 days! As if the rain was mocking my husband, it kept on pouring non-stop for three days! Finally, on the last day at Steamboat Springs, luck turned our way and Nasim was able to catch some fish. Not just any fish, but seven rainbow trouts each measuring about 15 inches! OK Gals and Pals. Let’s admit that many of us have hard time choosing what to prepare for breakfast. Just breakfast is half way of the trouble! Knowing how to make a healthy breakfast is the biggest dilemma. This Veggie Scramble is approximately 242 calories! Should I go on? It is delicious, filling and absolutely healthy! It has fat, protein, carbohydrate that we need for a perfectly balanced breakfast. Most of all, it is good for me (as in it is good for everyone)!
Lemon Scented Pull Apart Coffee Cake
This loaf-like dessert with a long name of “Lemon Scented Pull Apart Coffee Cake” is my sister’s favorite. We always make it when she is in town. For some reason, it comes out twice as good with her involvement. I say, she has her own ways with this cake :P This particular dessert is soooo fluffy, so lemony (at time orangy) and with the cheese icing, it is hard to find a substitution for it! Irresistible!
Banana Cake
Here is the deal. We buy bananas because at times our children eat a lot of them. But next time we buy them almost all of them end up in the trash! If you find yourself in a similar situation, your best bet is to bake something with bananas in order to avoid the shameful waste. Ultimately, this banana cake will come in handy. Unlike famous banana breads out there, this banana cake is moist due to the usage of less flour and addition of yogurt. What could be more pleasant than not wasting perfectly fine bananas and enjoying an amazing dessert?
Apple Pie with Dried Fruit
During our curtain hanging process a couple of weeks ago, we discovered a treasure hidden in a box, at the far corner of the balcony. It is not money, jewelry or an expensive artifact of any type. But the long road my husband travels to buy these delicious honey crisp apples is priceless. I was shocked that I forgot about their existence in our house. Surprisingly, honey crisp apples hold up pretty well, for up to 5 months, if stored properly.

My mother is my biggest inspiration in the kitchen. I love the way she cooks and believe me when I say that she is an outstanding cook by all gourmet means.
